Produced from selected Sangiovese grapes harvested by hand in small crates, part of which is slightly dried. The grapes undergo a prolonged maceration in 750lt barrels with daily manual punching-down. The ageing in French oak is over a year, after which the wine is aged in terracotta amphorae for at least a further 12 months.
TASTING NOTES
Compact ruby with garnet reflections. It offers a remarkable mineral elegance on the nose; intense, involving, with sensations of plum, ripe cherry and tobacco. The palate retains tones of dark undergrowth fruit. Slight balsamic and vanilla notes echo in the finish. The elegance of the wine envelops the palate with a firm but long and warm attack. The velvety tannins provide an endlessly persistent finish!
FOOD PAIRINGS
Perfect with stewed meats with herbs, mature cheeses and game. An excellent meditation wine. Serve at 18/20° C. Uncork at least two hours in advance.
