Produced with the greatest respect for tradition in the "chioppi" vineyard where the vines are joined to maple and ash trees. The bunches of this precious passito wine are grown at a height of over 2 metres in a vineyard dating back to 1945 that was entirely planted by hand. From here we select only Malvasia lunga del Chianti and Trebbiano Toscano, which are dried for over 4 months. The juice that is extracted is a concentrate of sweetness that ferments and rests for over 5 years in small wooden barrels.
TASTING NOTES
Bright amber colour. Intense aroma of vanilla, apricot jam and roasted coffee. In the mouth it is soft and caramelised, warm. Spicy finish.
FOOD PAIRINGS
We recommend pairing it with tasty cheeses and spicy gorgonzola. An excellent meditation wine.
