In the cool soils of the 'Pollaio' vineyards, this wine is made from Merlot grapes, macerated with indigenous starter culture at a controlled temperature for 6 days. Vinified in stainless steel and concrete, this wine has no added sulphites.
TASTING NOTES
Intense, bright red-purple colour, hints of plum jam and ripe cherries. Slightly herbaceous with a barely noticeable tannic vein. It tends to bring out all the typical features of the year in which it is produced and to have different characteristics and peculiarities between the various vintages.
FOOD PAIRINGS
Ideal accompaniment for savoury pies, pasta dishes, fresh cheese. Serve at 14-16° C.
